Peanut Butter Pie

My friend Leah gave me this recipe at my bridal shower and it has been a hit for ten years now.
Quick, easy and delicious.  
Everything I look for in a recipe.

8 oz. cream cheese
2/3 cup peanut butter
2 teaspoons vanilla

Blend above together until creamy.
Add one 8 oz. container of Cool Whip. 
Pour into chocolate graham cracker crust.

For topping, combine 3 tablespoons brewed coffee with 1 cup semi-sweet chocolate chips.  Microwave 1-2 minutes until melted.  Cool slightly and drizzle over pie.  Top with crushed peanuts. 

I usually make two at a time to take to picnics or potlucks.
