Menu Plan Monday for April 29th.

Last week was busy, but so much fun.  We went to the circus on Thursday and let me just say - wow!  It was a huge hit with everyone, adults included. 
 
Ronnie is on vacation this week and we have a ton of projects planned for the week.  The one I'm most excited about is converting half our garage into a chicken coop.  Don't think I've lost my mind.  Our home is very old (like 80 years) and our "garage" is a detached brick structure that is so narrow that our cars won't fit.  Well, they will fit if you are very careful getting them in.....but you can't open the doors once they're there.   Basically, it's a garage in name only.  We really just store extra junk in there.  Ronnie is framing in the opening and we're fencing in a run beside it.  I think it will be great!

This week also starts my Fit in 42 challenge with Tracey from Building My House.  We're following a six week course outlined in the book 42 Days to Fit.  We're making one healthy change a week for the next six weeks until we're eating whole foods.  This week is going to be my biggest challenge - no desserts and no sugary drinks.  You know I love both of these things, but I am determined to make a change.  Prayers would be appreciated.  I know I said I'd tell you more about it last week, but I got so busy with birthday fun I forgot.  I promise tomorrow's post will be all about it so you can jump on board if you'd like.

This week's menu isn't going to look too different since I'm just eliminating desserts:

Monday:  Cheeseburgers, loaded baked potato fries and salad.
Tuesday:  Roast chicken in the crock pot, carrots and green beans.
Wednesday:  Baked potato bar
Thursday:  Leftovers
Friday:  Movie night - Iron Man 3 and dinner out
Saturday:  Pizza night
Sunday:  Steak, baked potatoes and salad.

I stocked up on some great fruits and veggies at Sam's this weekend.  I hadn't planned on doing Fit in 42 when I did my once a month shopping and I didn't want to fail in week one because of my sweet tooth.  I spent $54 for a case of mangos, another 10 pounds of apples, 2 bunches of bananas, 2 cantaloupe, 1 box of spinach, 1 bag of romaine, 2 pack of iceberg lettuce, a big bag of carrots and a bag of celery.

Good luck on your fit in 42.

You can do it!!! I don't know if you are doing this to get away from processed, but something that gets me through (because I can't drink just water) is to drink crystal light or something that is made with splenda or artificial sugar. Good luck!!!

Maria - I've ordered some liquid stevia. I'm trying to get away from sugar and artificial sweeteners too. Hopefully it will be here tomorrow.
