If you haven't had it, you just can't understand. You can try, but it will be hard.
This weeks Pintervention was to make my own diy coffee syrup.
Of course, I chose coconut.
Here's what you do:
Gather your ingredients.
I ended up changing the sugar out for xylitol. I also used my fudge pan.
Here's what you need:
¾ cup sugar
¾ cup water
¼ cups cream of coconut*
2 tsp. coconut extract
Combine the sugar, water and cream of coconut in a small saucepan. Heat the mixture over medium-high, stirring occasionally, until the sugar has dissolved. Remove from the heat and stir in the coconut extract. Let cool. Store in the refrigerator.
I've been using this for about a week.
It is not my Coffee mate.
But it is good.
I don't see myself switching to this full time, but it will do if I need to make some up in a pinch.

I totally know what you mean. While I haven't tried the coconut, I am addicted to the French Vanilla. I don't normally drink coffee, but when I do I like it loaded with sugar and milk and flavor. I will have to try this lady's recipe and add some milk to the cup. Yummy!
The syrup is actually very good....it's just not what I'm used to. I guess when it comes to my coffee, I'm just a creature of habit.
