Menu Plan Monday for April 2nd.

How do you know that I'm a nurse? 

Just listen to my kids describing their injuries.

Josh:  Is subcutaneous tissue coming out of my arm? 
Josiah:  Are you going to amputate it?
John:  Ouch!  My coccyx!

What we lack in social graces, we make up for in correct anatomical terminology.

The coaches passed out the soccer schedules for the season.  We have all of 2 games out of 17 that are within a reasonable time frame of each other.  Oh, well, they love it and it's just a couple of months, right?

We have two great coaches this year....and a park that's beside the practice field. 

With 2 practices and 1-2 games a week, I'm getting ready for some quick and easy meals.

Here's this week's plan:

Monday:  Cheeseburgers, mac & cheese, pineapple
Tuesday:  Roast chicken in a crock pot, baked potatoes (same crock pot), salad
Wednesday:  Chicken Enchiladas, cheesy black beans, peaches
Thursday:  Grilled tilapia, Twice baked potatoes, sauteed zucchini
Friday:  Pulled pork sandwiches, corn, applesauce.
Saturday:  Leftovers
Sunday:  Steak, baked potatoes and green beans. Also Chocolate eclair dessert.

You read that right.  We're having steak for Easter dinner.  We love steak and we still have a freezer full. 

I'm also doing some freezer cooking this week by making double batches of the enchiladas, twice baked potatoes and pork.  I'm hoping to make life a little easier once the games start next weekend.

The schedule is mind boggling for me this year. I will never understand why they schedule so many during the week when the kids have school....but you're right, it's only a few months and they love it.

At least I don't have school to worry about (well, not traditional school). Remind me when I see you at the field....it's only a few month....it's only few months.
