Menu Plan Monday for April 30th.

I'm so glad it's the start of a new week.  Ever have weeks like that?  Last week was just a mess.  A full out mess.  We had to rush Josiah to the hospital on Monday night by ambulance when he had a severe asthma/croup attack - it was a horrible mess.  The rest of the week was full of doctor appointments and breathing treatments for all the kids.  I'm really praying this weather straightens up.  (Would you pray too?) The boys have never had this much trouble with their asthma. 
We did manage to have John's birthday dinner at the house on Wednesday.  Both sets of grandparents came over.  I made his favorite - chunky monkey chocolate chip pancakes and of course, bacon!  We overheard him telling Josh that it was the best birthday ever.  I'm so thankful that he's still young enough that the little things make him happy. 

This week is more of the same - work, call, soccer.  I'm also making a set of smash cakes for my friend Glenna.  Her little miracle babies are turning one.  They spent the first few months of their lives in the NICU.  I love seeing them and how great they're doing. 

Here's this week's menu:

Monday:  Alfredo, salad and garlic bread
Tuesday:  Pulled pork sandwiches, baked potatoes and peaches.
Wednesday:  Homemade pizza and salad
Thursday:  Steak, Parmesan potatoes, green beans
Friday:  Dinner at my sister in laws
Saturday:  Turkey enchiladas & salad (for Cinco de Mayo)
Sunday:  Breakfast for dinner.

My sanity savers for this week include making a double batch of baked potatoes on Tuesday - using 1/2 for Thursday nights meal, pulled pork in the crock pot, and Turkey enchiladas that I froze a few weeks back. 

I also get a freebie this week on Friday.  Our niece Erika is turning fifteen.  She was the flower girl in our wedding eleven years ago.  I can still picture her peeking around my wedding dress to look at her Uncle Ronnie.  It's hard to believe she's fifteen!

Hope this week is better and your boys are better....and I think your boys will always enjoy the simple things if you keep teaching them to be grateful. You are doing a great job already.....Enjoy!

so i have to confess. i have teased u unmercifully at times about your organization and stuff. well here i am eating my words friend. i am going to start weekly meal planning. insert your laughter here..... ok that is enough. love you. and yes i will be asking you for help.
