Menu Plan Monday for July 16th


I survived last week.  No, seriously, I survived despite my own efforts. 

I managed to fall down my back deck stairs and hit my side on a stone pillar, which sent me to the urgent care because I couldn't take a deep breath without crying.  I really thought my ribs were broken, but turns out their just bruised.  It's kinda like saying I thought I was hit with a big stick, but it was only a sock full of rocks.  Either way, it hurts.  Thankfully, and as always, my mom and mother in law helped me get through the week. 

Before my graceful fall, we went to Hovatter's Zoo in Preston County.  Best part of the day - hand feeding a giraffe carrot sticks. 




In all my life, I never dreamed I'd be this close to a giraffe, let alone petting one!  Seriously the best part of the day.

This week, we are starting back to school.  Well, part time.  I mostly want to get a head start on science.  A lot of it requires nature walks and observing bugs and birds - no better time than right now. 

This weeks menu has some repeats I didn't get to last week.  My mom brought us dinner a couple of nights and Ronnie made eggs & toast for us on Friday. 

Here's the plan:

Monday:  Foil tilapia, baked potatoes and corn on the cob.
Tuesday:  Ronnie's Birthday dinner out!
Wednesday:  Pork BBQ sandwiches, zucchini fries and fruit
Thursday:  Steak, sweet potatoes and green beans.
Saturday:  Pizza night
Sunday:  Leftovers

We're planning on touring the Grafton Dam on Friday.  Turns out, it's a big deal.  We had to give our names and addresses to get on the list, then Friday, I have to show ID to go on the tour.  Oh, and no cameras or recording devices inside the dam.  I have to say, this kind of makes me more excited to see it.  Like it's a big mystery or something.  I'll let you know how it goes.  Just no pictures.  I'm not going to the big house for you.

Oooh, sounds exciting!!! I never did get to meet Mr. Giraffe (i was too afraid of rain!) but the fact that the giraffe is local is really exciting! I will meet him one day! And, I'm having Pork BBQ tonite as well! Making it the crockpot, if you have a recipe for it I'd love to see it (since i cook mine in water it always ends up watery.) Take it easy as your recovering!!

Ready Maria - it's a tough recipe. Take my frozen pork roast. Add some salt & pepper. Cook on low all day. 30 minutes before dinner, drain & shred your roast. Add BBQ sauce and serve on buns. You know I'm all about simple.

Ouch! I am sorry to hear you fell. Oh my! You are blessed to have family near to help. It is a wonderful treat, I am certain. Yet, you still managed to get your menu planned! Yeah!

I love the giraffe. It has got to be one of the most amazing animals God created. Awesome to consider the circulatory system of such a creature.
