Menu Plan Monday for July 23rd.




Hey there. 

Last week's menu plan was a bit of a bust. 

I was so busy canning carrots, green beans and spaghetti sauce that I forgot to make dinner. 

Twice. 

Yep.  Mom of the year here.  Just as I was finishing up a batch in the canner, I would hear a little voice saying "I'm hungry.  Can we eat?".  Oops.  Remind me to put something in the crock pot next time I say I'm going to can.  Thanks.

I ended up serving oatmeal one night and scrambled eggs and toast the other. 

On the plus side, I have a head start on my canning this year. 

Here's what I'm planning to cook this week:

Monday:  Roast chicken, sweet potatoes and green beans
Tuesday:  Pancakes and eggs
Wednesday:  Steak, twice baked potatoes and corn on the cob.
Thursday:  Slow cooker Hawaiian Meatballs, rice and carrots
Friday:  Grilled Tilapia, salad and fruit
Saturday:  Pizza night
Sunday:  Leftovers

I've recently implemented Sunday as leftover day.  I made sure we had leftovers during my pantry challenge in January and it was great.  One night off from cooking and I threw very little away when I cleaned out the fridge each week.

You really need to stop showing all your recipes. I get hungry reading your blog. Argh!

I am sure all of us have forgotten to fix a meal. That is why having some canned food and extra pasta comes in handy. Can't lose!

Menu sounds fabulous as usual and I am jealous you are canning. I look forward to it next year.
