Menu Plan Monday for January 14th.
I made it through last week!
I actually accomplished almost everything I needed to last week. I have to say, I'm a little amazed.
Ronnie took the boys up to Cabela's and Gander Mountain on Saturday with his dad and brother for some guy time. I had patients to see most of the time they were gone, but I still managed to make it home for some quiet time. It was glorious!
We also picked out three calves for our beef this year. Best of all, they're being delivered to us for a fee of $100. If you think that's high, than you haven't wrangled cows before. In our opinion, it's well worth it to not have to make the drive to Maryland this year - with three cows. They'll be joining us in February.
Speaking of beef..... here's this week's menu:
Monday: French toast, eggs and orange juice.
Tuesday: Birthday party with friends.
Wednesday: Honey grilled chicken, carrots and cheesy broccoli.
Thursday: Salmon patties, baked potatoes and green beans
Friday: Chili and cornbread
Saturday: Cheesy chicken and rice, green beans and applesauce.
Sunday: Leftovers.
I'm actually enjoying the pantry challenge this time. I'm definitely saving money and using up some of our stockpile. I know for a fact that my family is enjoying my baking. This week I'm going to try my hand at homemade bread.

I am loving this pantry challenge this year too. We have had it hard financialy this year so I have packed away meat as I find it on sale. Well, I haven't bought any meat since Christmas and we have not missed a meal. I have almost enjoyed making up meals and using what we have. We still have plenty to use for the rest of the month. The only thing that bothers me is not being able to find any more good deals to reload when the time comes. Oh well. In 25 years we have never gone hungry!!
