Because I really, really didn't feel like cooking.
I was oh so close to just having Ronnie pick up pizza. Then a moment of genius hit.
Easy, peasy broccoli cheese soup. Courtesy of my friend and co-worker Misty.
Here's what you'll need - and it's probably already in your pantry:
2 packages of chicken flavored ramen noodles (oodles of noodles)
1 bag of chopped broccoli, 16 oz.
1 can evaporated milk
8 oz Velveeta cheese
Cook the noodles according to the package adding broccoli at the same time.
When noodles are done, add the flavor packet, milk and cheese. Stir and serve.
So easy! So good!
And yes. I feel like a pantry challenge rock star!

Pantry Challenge Rock Star? Really. You are so funny. I have those days too. I just don't feel like cooking and there is absolutely nothing nearby to pick up for dinner. I usually end up throwing something together that is quite tasty just from thinking about what is in my pantry. Yesterday, for lunch, I pulled out the leftover spaghetti, mixed a can of black beans, a teaspoon of chili powder, teaspoon of cumin, some garlic powder, a can of tomato sauce; mixed it and topped it with cheddar. I baked it until hot and it was delicious. Who new?

I have been trying to eat from my pantry this month, too. I almost gave up last night, but I remembered a recipe for fish lasagne that I haven't made in years. I ended up having everything that I needed except for heavy cream, but I used evaporated milk and it was great! I posted it on my cooking blog, if you want to take a look-see. :-)
I think I need to make a cookbook for all my "go to when I don't feel like cooking recipes". And I might have to add this one to it. You are a rock star.
I just had it again for lunch. It's soo good! Also, Rachel and Selena - you are trailblazers. I've never had beans on spaghetti or fish lasagna.
