Menu Plan Monday for March 11th.

Well, hello there Monday morning! 

Despite the last of the stomach bug rolling through our house, we actually had a good weekend.  The boys and I made giant peanut butter and peanut butter melt a way eggs at my friend and co-worker Molly’s house with Tracy, Kerry and Misty.  We’re doing a fundraiser for our Relay for Life team.  Seriously, the peanut butter melt a way eggs are the best!  It’s like heaven on your tongue. 

On Saturday, the weather was great for WV in March.  I actually was able to hang clothes out on the line.  You know how I love that.  Ronnie stayed home with the boys while I went and watched my beautiful niece, Breanna, in her cheerleading competition up at the college.  Look how adorable she is:

 Unfortunately, Mom & I had to leave early because Josiah was throwing up everywhere.  Then the bug hit Joshua around 4am Sunday morning.  Ronnie & I practically overdosed on yogurt, probiotics and grape juice trying to keep from getting sick.  So far, so good. 
Oh wait!  I have exciting news!  The chickens Leslie gave us two weeks ago to butcher had a stay of execution while I decided if anyone was really going to take care of chickens other than me.  Well, the boys really loved the chickens and had prayed every single night for them to lay eggs so we wouldn’t butcher them.  It was very sweet, but the chickens hadn’t laid in quite some time.  That’s why we got them - just to butcher.  Lo and behold, what happened on Wednesday:

Eggs!  And they keep on laying.  We’ve had eggs every day since.  The boys are beyond excited. 

Here’s this week’s menu:

Monday:  Honey grilled chicken, carrots and applesauce
Tuesday:  Pot roast with potatoes and carrots.
Wednesday:  Grilled tilapia, baked sweet potatoes and corn.
Thursday:  Pork chops, scalloped potatoes and green beans.
Friday:  Birthday dinner at the nursing home for my Nan.
Saturday:  Pizza night.
Sunday:  Roast chicken in the crock pot, baked sweet potatoes and broccoli.

Yay for eggs! I'm sure they are thrilled. I guess meat will have to hold off, right?

They are.... and so was I! I screamed like a crazy woman when they showed me those eggs.
