Granola.... in the Slow Cooker

I would venture a guess that I have burned well over a dozen batches of homemade granola. 

I am the queen of burnt granola.

No longer!

Thanks to my brother and my crock pot I am now a granola superstar.

My brother hooked Ronnie & I up for our anniversary with an overnight trip to Stonewall Resort.  He's one of the big bosses down there.  I had some of the best granola I've ever had down there with some Greek yogurt and giant blackberries. 

I tweaked their recipe and have now found the granola jackpot!

Here's what you'll need:
 



1 cup unsalted butter
1 cup honey
6 cups rolled oats
1 cup flaked coconut
1 cup sunflower seeds
1 cup sun dried cranberries
1 cup pecan pieces
1 tsp sea salt
1 tsp vanilla

Turn your crock pot onto high then get out your ingredients.  Add butter to the crock pot until it's mostly melted, then add in the honey.  Stir in oats and turn crock to low.  The mixture will be thick.
 
Cook on low for about 2 hours, stirring frequently.  I stir it every time I can smell it. 

When done, add in the remaining ingredients and stir well.  Pour onto wax paper to cool/dry.  Store in an air tight container. 


So good!

Okay, I totally am with you on burning granola. I think I can challenge your throne. And it hurts to ruin such great ingredients.

I'm totally trying this myself. Thanks for the idea!
