Menu Plan Monday for June 17th.

Hope you had a great Father's Day weekend.  We celebrated yesterday with Ronnie's family by heading out to Lone Star Steakhouse.  It was our first time there and I have to say, it was great. 

I told Ronnie that it's a good thing that 1) it was Father's Day weekend and 2) I really do love him.  Why, you ask?  Well because on Saturday, while I was in the middle of my soap making class, he called and casually asked if I would like ten chickens to butcher that night.  Ummm.  No.  No, I wouldn't.  So imagine my surprise when his friend Roger, who had gone to the livestock auction, calls on Saturday night to tell me he's on his way to our house with eight laying hens that he picked up for us at auction.  And two meat rabbits.  Say what?!    In case you've lost count, that brings our chicken total up to 22.  And the "new to us" 8 are molting and look horrible.  I've got them quarantined in the little coop so I can make sure they're healthy before I put them in with the rest of our not so little flock.  Roger got off the hook on this one, not only because I know Ronnie told him to get a couple of chickens and rabbits, but he also brought me a homemade rhubarb cobbler, some fresh mint and fresh buttermilk back from the auction.  On the plus side, the new eight are already laying nice brown eggs.  Well see how this goes.....

My knee is finally starting to feel a little better.  I'm barely using the meds they gave me and I'm walking around a little more.  I'm hoping to start training for my 5K in September on Saturday.  Hopefully.

This weeks menu plan is relying on the grill and crock pot.  The boys are going to art camp each afternoon this week with their cousins.  I'll be shuttling back and forth most of the week.

Monday:  Cheeseburgers, baked potato fries and watermelon
Tuesday:  Grilled chicken wraps and apples (eating in the van between camp & MMA)
Wednesday:  Spaghetti, meatballs and salad
Thursday:  Pork chops, grilled honey glazed carrots and applesauce
Friday:  Pizza night
Saturday:  Leftovers
Sunday:  Steak, baked potatoes and corn.

Hmm....maybe I should have added some eggs to the menu?  Fried eggs, boiled eggs, scrambled eggs, egg salad - it's not like I'm not going to have enough eggs, right?

At least I can't say our life isn't an adventure.....

What a good idea for Tuesday! Running and having to eat in the car usually results in drive thru for our house...what a great idea to make hand held meals quickly at home before running out and eating int he car!!

And so glad your knee is starting to feel better!! :)
