This recipe is from my friend Vicki. She first made it for me ages ago, when she was recuperating at my house after breaking her leg. I like to tell people she broke her leg saving a baby goat from a burning dumpster, but really, she was just walking across the road and fell. My way sounds much more dramatic, don't you think?
Here's the recipe:
Cut up your lettuce and mix with Italian dressing. This is your bottom layer.
Top this with a layer of corn chips.
Next, add your taco meat.
Then in whatever order you choose add:
Tomatoes
Green onions
Cheese
Avocado
Whatever makes your salad happy.
Top it all with a little bit of sour cream.
Delish!
Here's how I make it an even easier dish.
I put my very lean ground beef or turkey in the crock pot without browning it.
Then, I add my taco seasonings and mix.
The key is lean meat - otherwise you'll have a greasy mess when you get home.
I do have to use my potato masher to break it up when it's done, but I can have taco's without any added time when I have to work.
If I prechop my veggies, I can have dinner on the table after work in less than 10 minutes. Even with chopping, I can do it in less than 20. Not too bad.
