Menu Plan Monday for January 16th.


I'm starting the third week of my Eat from the Pantry Challenge.  I think we're still doing really well with our variety.  I'm actually almost out of oatmeal and I'm down to my last two bottles of ketchup, peanut butter and syrup. 

This week is another hopefully low-key week.  We've been home bound all weekend thanks to the weather and an asthma flare up by two out of three kiddos.  Thankfully, their asthma gets a little better every year.  

Here's this weeks plan:

Monday:  Cheeseburgers, onion rings and peaches
Tuesday:   Pot roast, potatoes and carrots with rolls.
Wednesday:  Chicken & pepper skillet.
Thursday:  Meatloaf, mashed potatoes and corn.
Friday:  Black bean soup with cornbread muffins
Saturday:  Pizza night (as always, by popular demand)
Sunday:  Leftovers

Sunday we'll be eating lunch at a church fundraiser for our college group, Chi Alpha.  I love fundraiser lunches after church.  Especially since we have soccer clinic at 1pm.  Good food, good price, good company.  

The only meal I'm not too sure of this week is the black bean soup, but I found three bags of black beans in my pantry and I'm going to give it a try.  Who knows, it might just be a big hit.  

I'm also breaking out the Hamburger Helper for lunch a couple of times this week.  I have about 14 boxes of the stuff, once I started counting.  

I keep thinking every week that I'm making more space in my freezer so I can start freezer cooking next month, but it doesn't seem like I've made that big of a dent.  I think one of my projects this week will be moving meat from my little freezer to my big freezer to see just how much room I do have.  I'm sure once it's organized, I'll have more room than I think.

My other project is to rescue the sweet potatoes from the cellar.  For some reason, they're not doing as well down there as they did last year.  I have some that are starting to turn.  I'm going to go ahead and mash & freeze them so I don't loose the whole crop.

Good luck with your freezer cleanout. I swear stuff multiplies in there, especially when you're trying to use it up. :)
