I'm entering the last week of my pantry challenge. I'll post my final thoughts later this week, but I've learned more than I thought I would.
This weeks menu is probably my most varied, as I've both uncovered some treasures lurking in the freezer and actually found some "me" time to search for new recipes while the boys played the Wii last Friday.
This is a busy week for us. I'm on call four days this week, as well as working my normal Tuesday. Add to that a couple of meetings at church and a wild game dinner I'm planning on sending Ronnie and Josh to on Saturday. And let's not forget my strong intent to re join home group on Sunday evening after our last soccer clinic. Once again, our week's a doozy. Home group readers, please place peer pressure on me to re join y'all. I need encouragement to drag my tired bones out on a Sunday evening.
So, here's my plan for this week:
Monday: Chicken lasagna, salad and cheese bread.
Tuesday: Beans & rice with peaches
Wednesday: Steak, carrots, & spinach rice casserole
Thursday: Cheese steak sandwich, cheesy cauliflower pancakes & applesauce
Friday: Chicken spinach pasta bake and salad
Saturday: Bean & rice burritos and salad
Sunday: Leftovers.
I'm sold on the idea of a weekly leftover night. Why didn't I do this before? I've not thrown away any leftovers in the past three weeks. Three weeks!
