Menu Plan Monday for January 21st.

Good morning! 

It really is a good morning.  We finally seem to be rid of the stomach bug here.  (Insert happy dance here).

I was thankful for above freezing temperatures this weekend so I could hang all the bedding I washed on the clothesline. 

Believe it or not, but this week I have two - that's right - two nights out planned for me.  It's rare I get out by myself once a month, unless you count working. 
I don't count working. 

Tonight I'm meeting some of my friends and fellow bloggers for a meeting of the minds.  Tracey, Megan, Kathleen, Maria and I are heading to Applebee's for some fellowship and blog brainstorming.  I'm excited not just because I'm getting to talk to adults but they are such fun girls.  Who knows what we'll come up with!

I also have an overnight event on Friday for our women's ministry at church.  I have no doubt it will be fun, but I also remember that I'm old.   I like to go to bed at 10pm.  I've also been asked me to give a little talk about memorizing scripture.  Oddly enough, while I have no problem yakking it up on my blog about things you probably could care less to know, I get nervous speaking in front of people.  I've noticed God seems to be pushing my comfort zones on a few things lately, this being one of them.  If you think about it, say a prayer for me as your going to bed on Friday. 

It's going to get cold this week here in good 'ol WV.  This is what's on the menu:

Monday:  Pork chops, baked sweet potatoes and applesauce.
Tuesday:  Soup beans and corn bread.
Wednesday:  Chili with fixin's (sour cream, cheese, corn chips)
Thursday:  Roast chicken, baked potatoes and green beans.
Friday:  Pizza
Saturday:  Chicken vermicelli and green beans.
Sunday:  Loaded baked potatoes (using leftover chili).

One of our favorite lunches is baked potato bar.  I set out all the toppings and let the boys go crazy.  They always finish what they make so it works for me.

I hope you have a fun week and enjoy your self with the ladies in your life. I need more of that, but it's difficult when hubby is away. Hard to believe I still have a month and a half of him being gone. It seems it has already been three.
