Hey look! I'm back!
Sorry for dropping off the face of the Earth. December was crazy busy and then I had ongoing internet problems. I could only use my phone to get online.
So now that I'm back, how 'bout a little menu planning? You know, being January, I always do the Eat from the Pantry challenge. This is the second week I'm doing this. Basically, I try to eat from what I have in the freezer, pantry and cellar to spend as little as possible this month. I usually just have to stop by the store for milk or bread.
Here's what we're having this week:
Monday: Cheeseburgers, loaded baked potato fries, and salad
Tuesday: Soup beans and cornbread
Wednesday: Chicken tacos (from the freezer), refried beans (from soup beans), peaches
Thursday: Kielbasa and potatoes, baked apples
Friday: Pizza night
Saturday: Best meatloaf ever, mashed potatoes and green beans
Sunday: Cracker Barrel Broccoli Cheddar Chicken, carrots.
And since it's pantry challenge time, here's the rest of our food plan:.
Breakfast: Rotation of oatmeal, coco wheats, waffles and eggs
Lunch: Leftovers, PB&J, soup, sloppy joes
Snacks: Carrots or celery and dip, yogurt, apples, oranges, kiwi, grapes, trail mix.
Treats: Banana bread, Pudding chip cookies
That's it.

Welcome, welcome back! I am trying your meatloaf recipe this week. I have tried several of your and they have all been a big hit. I'll let you know how it turns out....great to see a new post pop up!
