Menu Plan Moday for January 28th.

Lesson learned this weekend:  I am not as young as I used to be.

I went to the overnight sleepover for our women's ministry group on Friday, which by the way was super fun!   On Saturday, I felt like a zombie.  Sunday, I finally admitted that I can't stay up all night like I used to and I went to bed at 7:30.  It was glorious! 

This week we have a birthday party for my nephew Brent on Friday.  He's going to be double digits this year (10).  I just can't believe how fast he's growing up.  I also have a date with Ronnie tonight if the weather holds off.  The forecast is calling for freezing rain.  We'll see how it goes.

This weeks menu is going to be simple.  It's the end of the pantry challenge and I'm a little tired of cooking. 

Monday:  Baked potato bar
Tuesday:  Soup beans and cornbread
Wednesday:  Honey grilled chicken, sweet potatoes and green beans.
Thursday:  Easy taco salad
Friday:  Birthday party
Saturday:  Crock pot tilapia, cheesy broccoli and carrots.
Sunday:   Van's angel wings,  baked potato skins and salad.

Even though it's a simple menu, it looks so good.  I didn't order from HIS food this month because of the pantry challenge, but I do have some of the Teay's Valley cornbread mix left.  While I don't think the pantry box from HIS food is really a better value than the grocery store, oh my goodness, it is by far the best cornbread mix I have ever eaten.  It's incredible!  Plus, it's made in Teay's Valley, WV.  If you ever see it in the store, buy it.  You'll like it.

I always enjoys seeing your menu. It gives me ideas. A baked potato bar? How yummy is that? I like them with bacon, cheese, and broccoli.

Your menu looks great! And I know what you mean about needing your sleep. I went on a girls' beach weekend and while everyone else was staying up until 2 am talking, I was in bed by 11! But I didn't need an afternoon nap, either. Ha!
