Menu Plan Monday for September 28th.



It's money saving time around here.  You know, those times during the year when the belts get a little tighter.  Fall brings on birthdays, hunting and of course, Christmas shopping. 

The best way for me to free up some cash is to plan my menu.  It doesn't just save sanity, it saves a good bit of money.

And that's always good.

I actually sat down this weekend and made up my menu plan for the month of October.  You can check it out here.  My goal is to take about $50 a week from my grocery budget and grab a Christmas gift.  In reality, if I can squirrel away $30 a week, I'll be thrilled. 

This weeks plan is all about comfort food.  I think the chill in the air is getting to me.

Monday:  Awesome chili with venison and lick the pan cornbread
Tuesday:  Honey grilled chicken, green beans and carrots
Wednesday: Spaghetti & Meatballs, salad, garlic cheese biscuits
Thursday:  Cheeseburgers, oven fries and applesauce
Friday: Beer butt chicken, egg noodles and cheesy broccoli
Saturday:  Homemade pizza
Sunday:  Best meatloaf ever, roasted red potatoes, green beans

Yum, right?  I'm trying to make some room in the freezer before operation "If it's brown, it's down" (also known as deer season) starts.  With all four of my guys finally heading out, I need to work on clearing out space for some venison.

Menu Plan Monday for August 31st.




Menu planning has become even more important to me lately as I enter a pricey time of the year for us.  I have Josh turning eleven next week, Josiah's birthday follows in mid October, then the joy (and expense) of Christmas means there's no better time to tighten the purse strings. 

I think that's one of the biggest benefits of menu planning - the ability to make an easy change and free up some cash when needed.  I'll admit, I've been completely loosey goosey with our budget the past six months and I can tell it.  We're back on the menu plan and cash envelopes.  It's a good thing.

That being said, here's this week's menu:

Monday:  Steak hoagies, roasted potatoes, peaches
Tuesday:  BBQ chicken, baked sweet potato, corn.
Wednesday:  Crock pot lasagna, salad
Thursday:  Easy taco salad
Friday:  Co-op pizza party - I'm taking brownies.
Saturday:  Keilbasa & potatoes, applesauce
Sunday:  General Tso's

Menu Plan Monday for August 24th.







I'm up.  I'm caffeinated.  I'm ready to start school with these three characters:


 
 

I realized today that I'm always mentioning that we're busy this week and I need to make low key dinners.  We're busy every week.  Who isn't?  And I'm pretty much accustomed to low key meals that get dinner on the table fast.  It's kinda my thing.

This week's menu is no different:

Monday:  Cheeseburgers, potato salad, sautéed zucchini and peach cobbler.
Tuesday:  BLT's, potato salad, applesauce.
Wednesday:  Taco salads.
Thursday:  Roast chicken (in the crockpot), baked potatoes, green beans.
Friday:  Pizza night.
Saturday:  Zucchini lasagna - using my crockpot lasagna recipe but switching out noodles for zucchini since I have an abundance of zucchini.
Sunday:  Leftovers

Menu Plan Monday for August 10th

 
 
 
It's canning season and I. Am. Tired!


This is a bit of what I did this weekend:

 
 
I still have some peaches to finish up today or Wednesday. 
 
Our Summer has been busy with camps and day trips and just life.  It seems like it's just flown by yet again. 
 

Ronnie went to the auction without me on Friday since we had a sick kiddo.  I was a little worried since his motto tends to be "Go big or go home" but he actually did great.  I had horrific visions of him picking up another 100 dozen ears of corn (never again). 

I spent Friday afternoon/evening and Saturday morning canning peas, potatoes and tomatoes.  I had one peck of tomatoes left and was - frankly - tired, so I made the executive decision that we could eat the last peck.  Ronnie said there's no way and that it will go to waste.  Not gonna happen. 

Here's this week's plan:

Monday:  Squash & tomato casserole, applesauce.
Tuesday:  Burgers on the grill, loaded baked potato salad and green beans.
Wednesday:  Honey grilled chicken with bruschetta tomatoes, grilled peaches
Thursday:  Pancake night
Friday:  Steak, carrots and sautéed zucchini
Saturday:  Dinner at the neighbors
Sunday:  Leftovers

Menu Plan Monday for June 15th



Hi guys!

Summer is just chugging right along and I'm still wrapping up school.  My portfolio review is on Friday so I'm tweaking a few little things but other than that we are on break until after Kid's camp in the beginning of July.  I'm not taking a full on Summer break from school this year.  I tried that last year and as you can see, I'm just now finishing my portfolio.  It's too hard with working a day at the hospital and running a business from home.  I need that extra cushion that I get from keeping up with math and reading over the Summer.  We may also knock out some science.  I'm still deciding on that one.

This week is just the normal busy of life.  The status quo of craziness that I can handle.

Here's this week's menu plan:

Monday:  Pineapple meatballs over rice (using my pineapple squash I canned last year), salad
Tuesday:  Chicken and stuffing, green beans
Wednesday:  Burgers on grill, applesauce & watermelon
Thursday:  Grilled chicken, asparagus & baked potato
Friday:  Taco night
Saturday:  Grilled steak, sweet potatoes and corn on the cob
Sunday:  Grilled tilapia, spinach salad, baked potato


Can you tell I love my grill?  I really do love my grill.

Menu Plan Monday for March 9th.



What?  It's double digit temperatures in West Virginia? 

I don't know what to do with myself.

It's been such a long, cold winter this year.  At one point, I literally didn't leave my house for 12 days.  (And it was glorious). 

You would think choosing to hibernate this year that I would have kept up with the ol' blog here, but nope.  I was an antisocial hibernater.  (Spell check is telling me hibernator isn't a word.  It's probably right.)

But I'm back for now and it's my favorite day:  Menu Plan Monday.

So here's what we're chowing down on this week:

Monday:  Baked ham, mashed potatoes and carrots
Tuesday:  Slow cooker steak & gravy, leftover mashed potatoes, peas
Wednesday:  Ham & cheese quiche, applesauce
Thursday:  Baked nachos, salad
Friday:  Soup beans and Lick the pan cornbread
Saturday:  Baked subs - ham & cheese and chicken, bacon, ranch.  Served with salad and peaches.
Sunday:  Leftovers.

I found a really nice ham for $0.99/# at Aldi's on Saturday.  I love when I can bake something and then feed the family off of it all week. 

I'll post my ham recipe for you later this week.  It's seriously the best.

Menu Plan Monday for November 3rd.

This crisp weather is totally inspiring my menu this week. 

I have two weeks until the Christmas Expo at church and then my schedule finally starts to slow down.  If your local, make sure to stop by.  So many great items.  I'm planning on knocking out a big part of my Christmas shopping there.

 
 
 
 
With the weather turning colder, I'm planning on using my oven more often to help warm up the house in the evenings.  I figure, it's kinda like a two-fer. 
 
 
Here's the plan:
 
Monday:  Three packet pot roast with venison roast, potatoes and carrots. 
Tuesday:  Best meatloaf ever, baked potatoes (meatloaf & potatoes layered in crock pot), peas.
Wednesday:  Beer butt chicken, egg noodles, cheesy broccoli.
Thursday:  Uncle J's Dish as enchiladas, salad. (Use leftover chicken from Wednesday)
Friday: Crock pot lasagna, salad, garlic bread
Saturday:  Awesome Chili and homemade cornbread.
Sunday:  Taco salads, using leftover chili.
 
Wednesday, I'll be sharing the very best cornbread recipe ever.  Seriously.  No matter where I take it, people love it, empty the pan and in one case, I saw someone licking the crumbs.  It's that good.

Menu Plan Monday for October 6th.

Hey, hey, hey! 

I'm here to brighten your day with my oh so exciting menu plan.

What?  You're not excited to know what I'm fixing this week? 

That's so weird.

I'm a little wound up this week.  I agreed to share at our women's event at our church later this month and my first run through is this week.  I'm both excited and wanting to throw up at the same time.  I just keep telling myself that I'm being obedient to God and because of that, He will get me through it.  Without throwing up.  (That's an important part.)

So, this week is just more of the same - which I'm kinda loving.  School, work, MMA, church, random, unplanned craziness and an upcoming birthday for my little guy next week.  I'm still not to sure what we're doing about his birthday.  He keeps going back and forth between having a bonfire in the back yard and going to the museum in Pittsburgh to see dinosaurs. 

This week's menu is taking advantage of our nice fall weather:

Monday:  Baked fish, green beans and sweet potatoes
Tuesday:  Meatloaf, baked potatoes (in crock pot together), green beans
Wednesday:  Uncle J's dish, Mexican rice
Thursday:  Honey grilled chicken, roasted veggies, applesauce
Friday:  Easy crock pot potato soup (recipe coming Wednesday), bread machine bread
Saturday:  Homemade pizza
Sunday:  Crock pot lasagna, salad and garlic bread.

So many good meals.....and I 'm not even trying to butter Ronnie up for anything.

Menu Plan Monday for September 22nd.

Anyone else love Fall?  

It's probably my favorite season.  The weather is crisp, the trees are turning brilliant colors, and my life seems to get a little more routine - which is a good thing.

I haven't updated ya'll for a while because, for no apparent reason, it's just seemed like life has been completely crazy this year.  I'm fairly certain the fault is completely mine for rebelling against my crazy schedule.  I just couldn't keep up.  So I've spent some time trying to simplify - cutting back on activities and responsibilities.  I think it's working since I've been feeling a little less psycho.

So now that you're aware of my improved mental stability, how about we talk menu plan?

Here's what's cookin':

Monday:  Crock pot tilapia, baked potatoes (cooked in the crock too), corn.
Tuesday:  Chili on cornbread waffles.
Wednesday: Baked chicken, sweet potatoes and green beans
Thursday:  Uncle J's dish with tortillas, Mexican rice and salad
Friday:  Crock pot potato soup, bread in the bread machine.
Saturday:  Leftovers - the guys are going squirrel hunting.
Sunday:  Best meatloaf ever, mashed potatoes and carrots

I'll let you in on the awesomeness of cornbread waffles on Wednesday.  Paired up with the chili I canned last year, they're one of my favorite go to quick meals.

Menu Plan Monday for July 21st.

Oh my goodness!  It's almost noon on Monday and I haven't told you what we're eating this week.  How are you surviving?

I really have absolutely no good reason for being behind on my blog (or dishes, or laundry) today other than the fact that the boys & I have been having a paper airplane battle most of the morning.  I did not win.  At all. 

I did, however, decide to start the 31 Days to Clean challenge that I did a couple of years back after seeing the folded laundry on the couch and the paper airplane debris.  I have about 31 days until I start school again.  I almost seems like a sign, right?

Along with this week's menu, I'm also hoping to get a little baking done.  These boys are eating me out of house and home lately. 

Here's the plan:

Monday:  Spaghetti & meatballs, salad and garlic bread
Tuesday:  Meatball hoagies, carrots & dip, grapes
Wednesday:  BBQ chicken on a can, green beans and foil potatoes
Thursday:  Uncle J's dish on tortillas and peaches
Friday:  Pizza night
Saturday:  Steak, baked potato and green beans
Sunday:  Steak salads

I'm also planning on a baking day Wednesday to stock up on some snacks and treats like brownies, granola and bagels.  I'm also dragging out my canner to put up some spaghetti sauce this week.  We're hoping to harvest our honey on Saturday.  It's finally that time of year - time to start canning!  WooHoo!

Menu Plan Monday for July 14th.

Camp was crazy busy and fun but I'm so glad to be back home.  Go ahead and make fun of me, but I really missed my husband.  A week is just too long to be away. 

This week, I don't have a whole lot going on - which is a great feeling.  We have a couple of doctor's appointments and I'm hoping to go blueberry picking up Bunner's Ridge.  Oh, and it's family swim night for our church on Friday night.  Other than that, not a lot going on.  My plan is to get my
business books up to date, hang my new to me yard sale curtains finally, and order curriculum.

I'm trying to avoid the grocery store one more week if I can.  Why?  Well, I kinda hate going to the store, I need to use up some of my stockpile and I want to buy curriculum and that costs cash.   If I make do with what we have, I can use the money to grab some curriculum instead.  So that's my plan.

Here's this week menu:

Monday:  Baked subs, pasta salad and cherries
Tuesday:  Spaghetti, salad and garlic bread
Wednesday:  Baked chicken legs, fried potatoes and green beans
Thursday:  Biscuits and gravy, peaches
Friday:  Steak, baked potatoes and grilled carrots
Saturday:  Pizza night
Sunday:  Leftovers or pancakes.

And that's it.   Nice and simple.  And delish!

Menu Plan Monday for June 30th.

Finally.  I feel like I can take a breath!

School is done at last.  Portfolio and notice for next year has been mailed in.  Now, it's finally time for Summer fun.

This week, I'm getting the boys & I ready for a week at church camp.  Yours truly will be the camp nurse.  Truth be told, Ronnie is the one I'm worried about most since I have him spoiled rotten.  I'm leaving him with some meals to warm up while we're gone. 

This week is all about playing catch up.  I'm going to catch up on laundry, cleaning and the books for the business.  I'm planning on keeping the menu simple.

Monday:  Burgers, roasted red potatoes and corn on the cob
Tuesday:  Chicken ranch tacos, peaches
Wednesday:  Steak, baked potatoes and salad
Thursday:  Baked chicken legs, broccoli and applesauce
Friday: Pizza night
Saturday:  Uncle Jay's dish (recipe to come this week - it's amazing), salad and fruit.
Sunday:  Off to camp!

Menu Plan Monday for May 12th.

Well, hello again.

It's Monday.  You know what that means?  Menu Plan Monday!

This week I actually have a girls night planned with some gals from church to go see Mom's Night Out and grab dinner.  Yippee for girls night!

And this Saturday,  I'm teaching a class about menu planning called "Ditch the Drive Thru" at our women's conference at church.  There are a lot of good classes planned for the day, so I'm excited to see what everyone does.

It's finally garden time.  I was beginning to wonder if we would ever see warmer weather.  My tomatoes and peppers are ready to be transplanted and my poor beds are sadly over run with weeds.  Me and my trusty vinegar bottle are heading out to start the fight against weeds.  Hopefully they'll be in order by the end of the week.

Before I get started on too much of a tangent about my garden, here's the plan for this week:

Monday:  Shrimp scampi over baked potatoes and spinach salad
Tuesday:  Crock pot BBQ chicken and sweet potatoes, and corn
Wednesday:  Joni's squash and rice, salad with Italian dressing
Thursday:  Steak, grilled carrots and green beans
Friday:  Pizza night and fruit
Saturday:  Grilled chicken with onions and peppers, baked potato, sauteed zucchini.
Sunday:  Leftovers or breakfast for dinner.

Menu Plan Monday for February 17th.

Hey there.

Guess what?

It's still a snowy mess here in good ol' WV.

I'm trying my best not to complain because it's winter.  It's kinda what it's supposed to do right now.

But I am getting a little tired of mucking through the snow to take care of the chickens. 

Anyway....... today is not just MPM, it's also my nephew Shawn's birthday.  That boy is pure joy and energy!  We're a big February birthday family - me, Brent, Shawn, Leslie and my mom.  Just more proof that all good people are born in February.

I feel like I'm coming down with a cold, so it's full force on all my hippie tricks - oils, probiotics, garlic, honey and if I'm not feeling better by tonight I'm pulling out the apple pie moonshine for a good old fashioned hot toddy.  Talk about a good night's sleep.  Check back in Wednesday  and I'll post all my tricks that I use to avoid both illness and pharmaceuticals. 

Anyway, enough about me, here's the menu for this week:

Monday:  Kielbasa and potatoes, applesauce
Tuesday:  Soup beans and cornbread (I didn't make this last week)

Menu Plan Monday for January 20th.

Only ten more days to go in my "Eat from the Pantry Challenge". All I’ve picked up from the store has been four loaves of bread and six gallons of milk. In case you’re wondering, yes, I do go through about twelve gallons of milk a month. Don’t mention it to Ronnie. I’m not interested in milking a cow on top of everything else I do each day. (This would actually be a funny comment if it wasn’t so true.)

The good news is that I have finally made a big dent in my freezers, so I can go to my brother’s and pick up the meat I have stored in his freezer. We ended up keeping a cow and a half this year and on top of the extra chickens I had ordered from Emily, our freezers are overwhelmed. Not that I’m complaining. It was just good to make some room this month.

I don’t really have anything that out of the ordinary scheduled for this week, so that’s nice. Just the regular chaos. With that said, here’s this week’s menu:

Monday: Vegetable beef soup and homemade rolls

Tuesday: BBQ chicken and baked potatoes with applesauce

Wednesday: Baked potato bar and peaches

Thursday: Grilled chicken, green beans and carrots

Friday: Parmesan tilapia, baked potatoes and green beans

Saturday: Chicken and potato skillet, peaches

Sunday: Pineapple pork roast, rice and carrots


Breakfast will continue to be a rotation of eggs, oatmeal and cocoa wheats.
Lunch is leftovers, soup and sandwiches
Snacks will be carrots and dip, trail mix and apples
Treats will be chocolate chip bundt cake and no bake cookies.

Menu Plan Monday for January 12th

Hey look!  I'm back!

Sorry for dropping off the face of the Earth.  December was crazy busy and then I had ongoing internet problems.  I could only use my phone to get online. 

So now that I'm back, how 'bout a little menu planning?  You know, being January, I always do the Eat from the Pantry challenge.  This is the second week I'm doing this.  Basically, I try to eat from what I have in the freezer, pantry and cellar to spend as little as possible this month.  I usually just have to stop by the store for milk or bread. 

Here's what we're having this week:

Monday:  Cheeseburgers, loaded baked potato fries, and salad
Tuesday:  Soup beans and cornbread
Wednesday:  Chicken tacos (from the freezer), refried beans (from soup beans), peaches
Thursday:  Kielbasa and potatoes, baked apples
Friday:  Pizza night
Saturday:  Best meatloaf ever, mashed potatoes and green beans
Sunday:  Cracker Barrel Broccoli Cheddar Chicken, carrots.

And since it's pantry challenge time, here's the rest of our food plan:.

Breakfast:  Rotation of oatmeal, coco wheats, waffles and eggs
Lunch:  Leftovers, PB&J, soup, sloppy joes
Snacks:  Carrots or celery and dip, yogurt, apples, oranges, kiwi, grapes, trail mix.
Treats:  Banana bread, Pudding chip cookies

Menu Plan Monday for November 25th.

It's Thanksgiving week!

So, are you getting ready to make that big meal on Thursday?

Not me. 

We're weird. 

My husband's family are big hunters so we actually have our dinner with that side of the family in early November.  It just makes it easier on all of us not to have to deal with the mess of hunters coming home, butchering a deer or two and a huge meal.  On my side, my brother's over the food and beverage areas of a local resort and I'm a nurse, so between the two of us, one of us is usually working.  This year, he's working and I'm on call for the hospital.  So our dinner will be another day as well.  Our little family of five usually just has a very low key day of working up the deer, watching movies and hanging out together.  It works out well since I'll be rested for a night of intense Black Friday shopping with the girls. 

Having explained that - here's my menu for the week:

Monday: Pot roast with potatoes and carrots
Tuesday:  Leftovers  or sandwiches
Wednesday:  Cheesy taco soup
Thursday:  Roast chicken, carrots and green beans
Friday:  Crock pot pulled pork sandwiches and fruit
Saturday:  Pizza night
Sunday:  Dinner at church home group.

Menu Plan Monday for November 11th.

What a great weekend!

The craft show was a success, the boys went to a great birthday party and we ended Sunday by actually going to home group for our church and having a lot of fun. 

But the best part of the weekend?  Well, my husband surprised me with an early anniversary present.  He replaced the diamond in my engagement ring that I lost four years ago.  I just love it. 

Ronnie is on vacation this week to get some projects done around the house and of course, go hunting.  It was so nice to sleep in this morning.

We're heading out to the Veteran's Day parade later today so without further ado, here's the menu:


Monday:  Grilled chicken, green beans and carrots.
Tuesday:  Grilled chicken (leftover) salad with Italian dressing.
Wednesday:  Steak, loaded cauliflower, green beans.
Thursday:  Pizza night
Friday:  Cheeseburger skillet, salad
Saturday:  Chicken & broccoli stir fry with brown rice
Sunday:  Steak hoagie salads

Menu Plan Monday for November 4th.

Twenty nine degrees this morning. 

Told you those wooly worms don't lie.

It's time to start firing up the oven more often to help warm the house.  Plus, who doesn't love coming home to the smells of home cooking? 

This week is a busy one for me.  I'm working extra at Clarksburg and I have the craft show on Saturday - which means lots of work finalizing everything this week and setting up the church on Thursday and Friday.  I'm so excited.  There are now 47 tables with crafters and vendors.  You really should stop by if you can.  Make sure to find me and say hi. 

 
 
I feel like I say this every week, but I really do think I'm done with my putting up chores now.  I finished cutting up more chickens, made another round of stock from the bones and dehydrated a batch potatoes.  I may do another batch of potatoes.  Either way, I think I can finally put away my giant canner and supplies and get them out of the kitchen. 
 
So, here's what I'm fixing this week:
 
Monday:  Baked spaghetti, salad
Tuesday:  Crock pot chicken tacos (warming up meat from freezer), refried beans
Wednesday:  Kielbasa and potatoes, carrots
Thursday:  Venison BBQ (like pork BBQ) over baked potatoes, peaches
Friday:  Crock pot lasagna, green beans. garlic bread in the bread machine.
Saturday:  Breakfast for dinner or Colassano's pizza.
Sunday:  Crock pot roast chicken, roasted potatoes and cheesy broccoli.

Menu Plan Monday for October 21st.

My goal of no heat till trick or treat failed over the weekend.  It's was only 64 in the house before we went to sleep on Saturday and I knew it would be ridiculous when we woke up.  I'm not that surprised.  The Farmer's Almanac is calling for a bad winter with our area being "cold, wet & white".  Also, I've been seeing a lot of fat black wooly worms.  And yes, that's the kind of thing I base my weather predictions on.  Who needs Accuweather forecasts?  I have wooly worms.

This week we'll be digging up the potatoes and readying them for the cellar as well as dehydrating a batch.  Have I mentioned lately how happy I am that my brother in law bought a giant dehydrator at Lowe's this year?  And that he and Cindy let me be the one to break it in?  Seriously, it's amazing.  I also have plans to finally cut up the whole chickens in the freezer and the last round I'm picking up this weekend.  Some will be canned, but most will go back into the freezer after they're cut into parts.  By being lazy this Summer and not doing this after they came home from Emily's, I now have no room in my freezers.  Part of my chickens are at my mom's and part of the cow is at my brothers.  I have to get these girls cut up so I don't have to run across town to get ground beef.

Anyway, I'm cold.  That's the whole of that.  And I'm hungry.  So without further ado, here's the menu:

Monday:  Pork ribs, baked potatoes and salad
Tuesday:  Loaded soup beans and cornbread
Wednesday:  Moist, baked chicken green beans and baked apples
Thursday:  Best meatloaf ever, mashed potatoes and carrots
Friday:  Hot turkey sub, salad and oranges
Saturday:  Chicken ranch tacos, refried beans and corn.
                  (Taco meat from the freezer and making refried beans from Tuesday's soup beans)
Sunday: Sour cream noodle bake,  green beans and applesauce.

And that's it.  I'm planning on using the oven quite a bit this week because it warms up the whole house before bath and bedtime, without having to use the furnace too much.  And that's always a good plan.
